Elizabeth was the captain of the first TN Lady Vols team to qualify for the NCAA Championships in 2006. In 2005, Elizabeth served in the Bow Seat of the V8+ that holds the programs best finish of 8th place at the NCAA Championships. Elizabeth continued her education to achieve her Bachelors of Science, concentrating on Dietetics and Clinical Nutrition Services. Duel Masters of Science, concentration of cellular Molecular Nutrition & Dietetics Intern. Now serving as the Performance Chef for Tennessee Athletics & Football Nutrition. She serves on the T Club board to bring Vols and Lady Vols closer together.
